Beets??

In our quest to slim down a little, Paul and I have been eating more fresh fruits and vegetables. But it's easy to fall into a rut buying and cooking the same familiar foods all the time. So we signed up for a produce delivery service. I have done this before but I wasn't able to keep up with it. Of course, I was single and eating out all the time then. Also, this service hasa bi-weekly option in addition to weekly, so we are starting out with the bi-weekly setup. Every other week they will bring us a bin of a variety of fresh produce, based on what is in season, much of it being locally grown. Today our first bin arrived:
It contained: peaches, Braeburn apples, D'Anjou pears, apricots, strawberries, bananas, romaine lettuce, beets, a yellow onion, broccoli, asparagus, and roma tomatoes.

Everything looks delicious, except, well.....beets?? I really don't know anything about cooking with beets but this is my chance to learn I guess. If only I could talk to Dwight Schrute. I have found some recipes online but if you have any easy ones, feel free to pass them along.

I am pretty sure my Dad LOves beets. Do not ask me why.

I remember when you did that produce service. It was fun seeing what they brought you every week. I wish we had something like that because it is so fun to try new fruits and veggies without doing any work to find them!

Probably 80% of the time we make beets at our house, we use this Martha Stewart recipe that is really, REALLY easy and delicious.

beets can be good...boil them until soft, add strawberries, a teaspoon of equal or sugar, 1 teaspoon of orange juice and a mashed banana. Put them all in a blender and refrigerate...my kids will still eat them. You can also put beet juice in a vaseline mixture in a small tin container and have homemade red lip balm. smiles.
